Description
This Air Fryer Spanakopita is a crispy, flaky version of the classic Greek spinach and feta pie. Ready in less time and with less oil, it’s the perfect appetizer or snack.
Ingredients
16 oz frozen chopped spinach, thawed and well-drained
2 bunches flat-leaf parsley, chopped
1 yellow onion, finely chopped
2 garlic cloves, minced
2 tbsp olive oil
4 eggs
10.5 oz feta cheese, crumbled
2 tsp dried dill
Phyllo pastry sheets (16 oz), thawed
1 cup olive oil for brushing
Salt and black pepper to taste
Instructions
1. Preheat air fryer to 350°F.
2. Make sure spinach is well drained, then mix with parsley, onion, garlic, olive oil, eggs, feta, dill, salt, and pepper.
3. Lay out one phyllo sheet, brush with olive oil, and layer another on top.
4. Spoon filling at one end, roll into triangles or logs.
5. Repeat with remaining phyllo and filling.
6. Place spanakopita in air fryer basket, seam-side down.
7. Air fry for 10–12 minutes or until golden and crisp.
8. Serve hot with tzatziki or your favorite dip.
Notes
Avoid overcrowding the air fryer basket for even cooking.
Use parchment liner for easier cleanup.
You can freeze unbaked spanakopita and cook from frozen.
