These Cinnamon Belgian Waffles are light, crispy, and filled with warm, spiced flavor. Perfect for weekend brunch or special breakfasts, they combine the richness of buttermilk with a touch of cinnamon for a comforting twist on a classic.
Ingredients
1 cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon baking soda
½ tablespoon white sugar
¼ teaspoon salt
1 pinch ground cinnamon
2 large eggs, separated
1 cup buttermilk
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
1. Preheat your waffle iron according to the manufacturer’s instructions.
2. In a large bowl, whisk together flour, baking powder, baking soda, sugar, salt, and cinnamon.
3. In a separate bowl, beat the egg whites to stiff peaks.
4. In a third bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract.
5. Add the wet mixture to the dry ingredients and stir until just combined.
6. Gently fold the egg whites into the batter until incorporated.
7. Pour 1/3 of the batter into the waffle iron and cook until golden and crisp, about 5 minutes.
8. Repeat with remaining batter and serve immediately with toppings of choice.
Notes
To keep waffles crisp, place them on a wire rack instead of stacking.
For extra flavor, top with sautéed apples, powdered sugar, or maple syrup.
Leftovers can be frozen and reheated in the toaster.
