Ingredients
2 cups cooked turkey, chopped
1 cup frozen peas and carrots
1/2 cup diced onion
1/4 cup unsalted butter
1/3 cup all-purpose flour
1 3/4 cups low-fat milk
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp dried thyme
2 unbaked pie crusts (top and bottom)
Instructions
1. Preheat oven to 400°F (200°C).
2. In a saucepan, melt butter and sauté onions until soft.
3. Stir in flour and cook for 1 minute.
4. Gradually add milk, stirring constantly until thickened.
5. Stir in salt, pepper, thyme, turkey, and veggies.
6. Roll out one crust and place in a 9-inch pie dish.
7. Pour filling into crust and top with second crust. Seal edges.
8. Cut slits for steam and bake for 30–35 minutes until golden.
9. Let rest 5–10 minutes before slicing and serving.
Notes
Swap turkey for rotisserie chicken if needed.
