Description
Creamy no bake strawberry crunch cheesecake with a nostalgic topping and no oven required. A chilled dessert that’s light, easy, and always a hit.
Ingredients
24 golden sandwich cookies (like Golden Oreos), crushed
6 tbsp melted butter
16 oz full-fat cream cheese, room temperature
1 cup granulated sugar
1 tsp vanilla extract
1 tbsp lemon juice (optional)
1 ½ cups heavy whipping cream, whipped to stiff peaks
1 cup freeze-dried strawberries, crushed
1 cup crushed vanilla cookies or Nilla wafers
Instructions
1. Combine crushed cookies and melted butter; press into pan and chill.
2. Whip cream to stiff peaks and set aside.
3. Beat cream cheese, sugar, vanilla, and lemon juice until smooth.
4. Fold whipped cream gently into cream cheese mixture.
5. Spread mixture over crust and smooth top.
6. Mix crushed vanilla cookies and freeze-dried strawberries for topping.
7. Sprinkle topping over cheesecake and press lightly.
8. Chill for at least 6 hours or overnight before serving.
Notes
For firmer filling, add 1 tbsp dissolved unflavored gelatin to the cream cheese mix.
Always chill overnight for clean slices.
Use full-fat brick-style cream cheese only.
