Ingredients

1.5 cups water

1.5 cups milk

1 cup polenta (coarse ground cornmeal)

1 tsp kosher salt

1/2 tsp ground black pepper

3/4 cup pumpkin puree

2 oz cream cheese

1/4 cup freshly grated parmesan

1 tbsp chopped fresh sage


Instructions

1. Add water and milk to a saucepan and bring to a boil.

2. Whisk in the polenta gradually and reduce heat to medium-low.

3. Continue whisking for 5–6 minutes until thick.

4. Add pumpkin puree, cream cheese, parmesan, salt, pepper, and sage.

5. Stir until fully combined and creamy.

6. Serve hot, garnished with additional parmesan and sage if desired.

Notes

Use canned or fresh pumpkin puree—both work well.

You can use all water or all milk depending on desired richness.
