Description

A rich and comforting creamy chicken and mushroom pasta recipe made in one pan with tender chicken, sautéed mushrooms, and a luscious garlic cream sauce. Perfect for a cozy weeknight dinner or entertaining guests.


Ingredients

2 tbsp olive oil

1 lb boneless, skinless chicken thighs (or breasts), sliced

2 cups cremini or button mushrooms, sliced

3 cloves garlic, minced

1 tsp salt

½ tsp black pepper

1 tsp dried thyme (or 1 tbsp fresh)

¾ cup chicken broth

1 cup heavy cream

½ cup grated parmesan cheese

8 oz pasta (penne, fettuccine, or your favorite)

1 tbsp chopped parsley (optional, for garnish)


Instructions

1. Cook pasta according to package directions. Reserve ½ cup pasta water. Drain and set aside.

2. In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.

3. In the same pan, add mushrooms and cook until browned and softened. Add garlic and thyme; sauté 1 minute.

4. Pour in chicken broth and simmer 2–3 minutes, scraping up browned bits.

5. Stir in cream and bring to a gentle simmer. Let reduce slightly.

6. Return chicken to the pan, add parmesan, and stir until melted.

7. Add cooked pasta and toss to coat. Use reserved pasta water to loosen sauce if needed.

8. Garnish with parsley and serve hot.

Notes

For a lighter version, substitute half-and-half or milk and thicken with cornstarch.

Use any pasta you like, but short shapes like penne or rotini hold sauce well.

Store leftovers in an airtight container in the fridge for up to 3 days.
