Ingredients:
- Chicken Thighs: 6 skin-on, bone-in pieces
- Salt: to taste
- Ground Black Pepper: to taste
- Garlic Powder: a pinch, or to taste
Directions:
- Prepare for Baking:
- Preheat your oven to 475°F (245°C). Place a wire rack inside a broiler pan or baking pan to keep the chicken elevated during cooking.
- Season the Chicken:
- Pat the chicken thighs dry with paper towels to ensure the skin crisps up nicely. Carefully lift the skin of each thigh and sprinkle salt, pepper, and garlic powder underneath. Replace the skin and then season the outside of the thighs with the same spices.
- Bake the Chicken:
- Arrange the seasoned chicken thighs on the prepared rack. Roast in the preheated oven until the skin is golden, about 20 minutes.
- Reduce the oven temperature to 400°F (200°C) and continue roasting until the chicken is cooked through and the juices run clear, approximately 30 more minutes.
- Rest and Serve:
- Allow the chicken to rest for 5 minutes after removing it from the oven to ensure it retains its juices when carved.
- Serve the chicken thighs hot, ideally with a side of vegetables or a light salad for a balanced meal.
