Total Time: 55 minutes

Ingredients:

  • Frozen Chopped Spinach: 2 packages (10 ounces each), thawed and squeezed dry
  • Feta Cheese: 1/2 cup, crumbled
  • Mozzarella Cheese: 1/2 cup, shredded
  • Parmesan Cheese: 1/2 cup, freshly grated
  • Garlic: 1 clove, minced
  • Phyllo Dough: 1 package (1 pound), thawed
  • Unsalted Butter: 1/2 cup, melted
  • Tzatziki Sauce: for serving
  • Fresh Dill: chopped, for serving

Directions:

  1. Prepare the Filling:
    • In a mixing bowl, combine spinach, feta cheese, mozzarella cheese, Parmesan cheese, and minced garlic.
  2. Prepare the Phyllo:
    • Line a baking sheet with parchment paper. Place one sheet of phyllo on a clean work surface and brush lightly with melted butter. Layer two more phyllo sheets on top, brushing each with butter. Keep remaining phyllo covered with a damp towel to prevent drying out.
    • Cut the phyllo stack lengthwise into three 3-inch-wide strips.
  3. Form the Spanakopitas:
    • Spoon about 1 tablespoon of filling at the bottom of each phyllo strip. Fold the bottom right corner over the filling to form a triangle, then continue folding (like folding a flag) until you reach the end of the strip. Place each completed spanakopita seam-side down on the prepared baking sheet and brush lightly with butter. Repeat with remaining phyllo and filling.
  4. Preheat the Air Fryer:
    • Set the air fryer to 375°F (190°C).
  5. Air Fry the Spanakopitas:
    • Arrange spanakopitas in an even layer in the air fryer basket, ensuring they do not overlap. Work in batches if necessary.
    • Cook for 12 to 15 minutes, turning once halfway through, until golden brown and crispy.
  6. Serve:
    • Let the spanakopitas cool slightly before serving. Serve with tzatziki sauce and garnish with chopped fresh dill.

Cook’s Notes:

  • This recipe can be prepared ahead. Assemble the spanakopitas through Step 3, then freeze on a baking sheet until firm. Transfer to a freezer-safe container or bag and freeze for up to 3 months. Cook as directed without thawing.
