Total Time: 3 hours 25 minutes

Ingredients:

  • Olive Oil: ⅓ cup
  • Lemon Juice: 1 ½ tablespoons, freshly squeezed
  • Red Wine Vinegar: 1 ½ tablespoons
  • Fresh Oregano: 1 ½ tablespoons, chopped
  • Garlic: 2 cloves, minced
  • Salt: ½ teaspoon
  • Ground Black Pepper: ¼ teaspoon
  • Boneless Leg of Lamb: 1 ½ pounds, trimmed of all fat and cut into 1-inch cubes

Directions:

  1. Prepare the Marinade:
    • In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, chopped oregano, minced garlic, salt, and black pepper to create a flavorful marinade.
  2. Marinate the Lamb:
    • Add the cubed lamb to the bowl and toss until well coated with the marinade. Cover and refrigerate for at least 3 hours, or overnight, to allow the flavors to meld.
  3. Grill the Lamb:
    • Preheat your grill to medium-high heat and lightly oil the grate.
    • Thread the marinated lamb onto skewers, reserving any leftover marinade for basting.
    • Grill the skewers for 10 to 12 minutes, or until the lamb reaches your desired doneness, basting occasionally with the reserved marinade and turning the skewers for even cooking.
  4. Serve:
    • Arrange the grilled Lamb Souvlaki on a platter and serve with rosemary garlic roasted potatoes, Greek salad, and pita bread for a complete dining experience.

Tips:

  • Soaking wooden skewers in water for 30 minutes before grilling can prevent them from burning.
  • The lamb can be marinated overnight to enhance its flavor and tenderness.
